This sounds very interesting. What kind of peanut butter would you suggest using?

I used natural crunchy peanut butter. I also didn't add any more peanuts, but I'm sure they'd be yummy. It was divine, I didn't want to stop eating it. Yum!!!

I made something like this once, but it had tempeh in it (and I think some crushed tomatoes in the sauce as well). Yum!

There is a recipe similar to this in a Moosewood book that I have, and I really like it. I don't have it in front of me, but I do remember that it did not have parsley and that it did have some cilantro.

And garnishing it with some crushed peanuts and some scallions is good too.

Yeah I got it from a website that adapted it from the Moosewood book. I guess I should cite my sources! I don't particularly like scallions, and I couldn't find plain peanuts anywhere, so I skipped that part...
