no prob. the PPK forums have an internal search function, and it's really easy to find stuff if you know what to look for. :-)

I've made them (without a recipie, just going "right, what am I going to do with this beetroot"), by grating (shredding) the beetroot, bit of linseed squodge to hold it together, some chopped onions for a bit of extra flavour. Fry in oil. Eat.

My recipes are very low-tech.

Indeed. A lot of them can be summed up by 'create squodge. Firm squodge in pan/oven. Eat squodge'. Perhaps I should branch out into purees?

Strangely, I made something very similar yesterday, inspired by seeing her pictures... there is a "holiday vegetable latke" recipe at vegetariantimes.com, and it is delicious:

I used sweet potato, red beets, carrots, and a small red potato for the grated mix.......

this restaurant near me (the Northstar Cafe in Columbus, OH) has the most amazing veggie burger that I've ever had, and the only ingredient that they'll disclose is beets, so I've been meaning to mess around with this recipe to try to figure out something close to their veggie burger--thanks for the reminder!
