substitutions in the uncheese cookbook

We just got the uncheese cookbook and were wondering if there is a lower-fat substitute for sesame tahini. Thanks in advance.

does this make a big difference with the texture of the tahini? i've tried that with natural pb and the stuff turned rock solid.

As fat goes, you could do much worse than getting it from tahini.

I've found that tahini absorbs water really well. You can dilute it, maintaining about the same consistency, by whisking warm water in gradually until it thickens. I don't know how that would affect any of the uncheese recipes but I've been able to reduce the amount of tahini by about half in a lot of other recipes, with no ill effects.

I used to make my own "tahini" for falafel with sesame paste/seeds, plain soy yogurt, pepper, and a few tablespoons of lemon juice.
