parsley!

We've been given a HUGE bunch of parsley from my mum's friend's garden. its fresh and smells beautiful. i have plans for potatoes and parsley, and im going to chop some of it up and freeze it into cubes in an icecube tray, to season soup with later, too.

so, im just wondering, does anyone know any really good, healthy and vegetarian dishes that ( Read more... )

You can use parsley to make a rather nice hair rinse that brings out any red in your hair. Make a decoction, allow it to cool, and strain. Pour over your hair, being sure to get it thoroughly covered, and dry. After a few days of this, you should find your hair becoming more red.

Or you could make parsley soup (delicious chilled), look at Kake's parsley recipes, make a parsley salad dressing or dip, or learn about parsley in Practical Parsley. Googling for vegan+parsley provided me with many, many more results.

Everyone is spot on with the tabbouleh suggestions. I used a recipe a little bit different than the one already provided. It came out delicious. I modified it so that I only used 3/4ths of a cup of mint but I'll present it in its original form below.

1 cup bulgur (or couscous if preferred)
2 teaspoons olive oil
1 cup chopped fresh flat-leaf parsley
1 cup chopped fresh mint
3/4 cup finely chopped spring onions
4 Roma (egg-plum) tomatoes, chopped
1/2 cup olive oil
1/2 cup lemon juice
2 cloves garlic, crushed

1. Put the bulgur in a bowl and pour in 1 cup boiling water. Mix in the olive oil, then set aside for 10 minutes. Stir again and cool.

2. Add the herbs, spring onion and tomato to the bulgur and mix well. Whisk the oil, lemon juice and garlic together and add to the bulgur. Mix gently and season well. Cover and chill for 30 minutes before serving.
