Cookie press shortbread, and replacing egg replacers :P

EDIT: We ended up making the orange shortbread, and it turned out great! We doubled the recipe, using half Soy Garden and half shortening. We zested a mega big orange and squeezed about a third of the juice into the dough. And once we got the cookie press to work, the dough piped through wonderfully. I made some awesome cookie press cookies some months back and managed to completely forget which recipe I used. I tried to find it, but I'd loaded up so many different ones while searching that I couldn't figure it out. D'oh! It was mostly fat (I used earth balance) and sugar, in any case. Do let us know what ends up working well for you.

Meanwhile, I'm off to search for a good cookie recipe for tonight that can handle my current limitation of only brown sugar or molasses as sweeteners. :)
