i've done that in cookies before.. i had a sugar recipe that called for maple syrup and i just used regular pancake syrup and they still turned out really good and were the favorite cookie out of the batch i made :)
I wouldn't suggest it. If you want to save money, consider a syrup yourself (like the brown sugar syrup here http://www.hungrybrowser.com/phaedrus/m0917F04.htm#5, omitting the butter and walnuts). Why pay for artificial maple flavouring in recipes that aren't really using maple syrup for flavour? (I'm thinking of a lot of vegan recipes that just use maple syrup as an unrefined sugar.)
In the occasional recipe where maple syrup is a dominant flavour, I'd suggest using the real thing. Hopefully you'll have saved enough money by not buying table syrup to afford it :)
I used some table syrup that contained 15% real maple syrup in a recipe that called for maple.... that table syrup has the real maple taste, but not so expensive.
