I just typed this up for someone in response to a comment on the other days post on key lime pie and thought I'd put it here as well. :) It is from the 1997 cookbook Cooking with Peta.

yes! i went to key west, florida last month, and have been unconsciously craving key lime pie since then, trying to resist the urge.

How's the texture of this filling? I've found some such mixtures to be rather gummy...
