That's awesome -- the vegetarian only invite, that is!

:( Sadly, the Thanksgiving I will be to will have nothing vegan except for what I decide to make for myself. :Þ My fiance's mom has already lugged in two turkeys for the occasion. >:\

well, this was a friends only festivities! i have to face the family next week.. ill only have potatoes and stuffing there. =p

Ugh, tell me about it. I have to bring my own margarine and soymilk, (they're at least nice enough to save me some potatoes and veggies before they add their milk and butter), gravy, dessert, etc. This year I ordered myself a tofurkey roast to bring, too. I hope it's worth the price! D:

Awesome!
I've never done a Veggie-only thing before, and although I wouldn't want to leave people out, I can imagine that there would be really fun and easy going to not be singled out as eating differently from the main.

...then again, if I did something like that, most of my friends wouldn't be able to come :P

OP: So how about those stuffed mushrooms? Got a uh, recipe for them?
And I LOVE the Ohio butter! They're so cute.

Im living large in Akron.

I bought pre-made phyllo-mini cups, sauteed chopped mushrooms and put them on the bottom, and put a mini scoop of "stuffing" on top, baked for 10 min.

The stuffing for the muchrooms I used: crushed oyster crackers (usually use a Tollhouse-type cracker, but I was out), chopped onion, LOTS of parsley and oregano, salt, and bring it together with a vegetable broth. Delicious!
