droooool!

i have a bottle of soy lecithen that i've never used, and it's really very thick and it smells weird and tastes weird. does anyone know if it's gone bad? does it go bad?

I have NO IDEA! This stuff is totally new to me so I will soon be looking for ideas. Try it as a binder in something and let us know what happens. The taste isn't great but as long as you're not chugging the bottle I think it'll be okay.

it's a sticky liquid. They also sell it in a powder. I need to find out more about it besides the use as a binder.

I don't know I've ever tasted egg yolks so I couldn't compare it, but I doubt it.

Can you just use egg replacer instead of making the vegan egg yolk?

I ma unsure, probably, but I think you'd need to use less liquid than normal.

So I know that it's been about five years or so since this was posted, but I thought I would add my two cents anyways. I was desperately in the mood the other night for some kind of lemon-y dessert, and these sounded like they just may hit the spot.

For the egg yolk, I mixed a tablespoon or so of lemon extract with maybe a couple tablespoons of cornstarch, and then just threw that in the mix.

The cookies were amazing. My omni friend came over to dinner, and she had already helped herself to a second cookie before she had even finished her first. My mom loves them as well, and she's pretty picky when it comes to lemon cookies.
