vegan and wheat free stuffed artichoke ideas

I want to make stuffed artichokes, but I'm having recipe trouble. I've been searching google for recipes, but they all call for cheese and bread crumbs. I can't bread or cheese. I'm trying to figure out what to stuff my artichokes with. I'm feeling totally clueless and non-creative tonight. I just don't know what to use. Thanks for any suggestions

Have you tried making your own bread? I make a loaf of gluten free bread every so aften as it is so expensive.

After using it for a few slices of toast, I make the rest into bread crumbs and put them in the freezer to use whenever I need them.

Home made gluten free bread doesn't work out too expensive at all. :o)

I say tvp or qinoa (sp??) either or both cooked with veg broth, garlic and or italian seasoning.
