I would really love it if you might tell me what you ate today, breakfast, lunch and dinner (+ any snacks). Doesn't matter if its a typical day or not ( Read more... )

breakfast - leftover risotto from yesterday's dinner, coffee
lunch - avocado roll, coffee
dinner - arancini (fried breaded rice balls), roasted veggies

uh... i don't usually eat this much rice. it's usually more along the lines of curry over quinoa for dinner (usually with beans or seitan in the curry for extra protein), and if i get breakfast it's generally a bagel. avocado rolls are a pretty common lunch for me, though.

I haven't eaten the healthiest but here's what I've had so far.

Glass of soymilk
Potato chips
Amy's black bean vegetable enchiladas

breakfast: oats, banana, soymilk and coffee
lunch: lentils, rice, kale, little bit of salad
dinner: quinoa and black bean chili. probably have a pear for dessert and popcorn for a snack later!

1/4 package of tofu, fried in a teaspoon of olive oil, sprinkled with nutritional yeast, salt and pepper, on a slice of whole wheat toast, topped with about 3/4 cup of sauteed spinach and some lemon juice
Coffee with soymilk
an orange

Carrot sticks and hummus

Whole wheat tortilla wrapped around salad greens, shredded carrot, hummus and avocado

Air-popped popcorn with a sprinkle of olive oil, soy sauce, and nutritional yeast

12 almonds

Sweet potato/Black bean enchilada casserole with a spicy mole sauce, topped with diced avocado

slice of chocolate cake

Comice pear.

Yesterday:

Porridge with seeds, banana, sultanas, cinnamon and nutmeg, and ground flaxseed. Several cups of tea with soya milk.

Pasta with homemade pesto, salad, homemade apple and pear sauce.

Shared Chinese takeaway: veg chow mein, tofu in Szechuan sauce, tofu in sweet and sour sauce, fortune cookie.

Today:

Porridge with seeds, banana, sultanas, cinnamon and nutmeg, and ground flaxseed. Several cups of tea with soya milk.

Hummus and veg sarnie, roasted asparagus, fruit salad (mixed pineapple, melon and banana).

Dinner will be roasted potatoes, various mixed roast veg, Tuscan white beans and sauce, fennel and pear (sauteed with lemon juice, olive oil and salt and pepper).

Tomorrow:

Porridge with seeds, banana, sultanas, cinnamon and nutmeg, and ground flaxseed. Several cups of tea with soya milk.

Couscous and roasted veg, Tuscan white beans and sauce, fruit salad (pineapple, melon, banana).

Lemon and carrot dhal and saag bhajee with brown basmati rice.
