I'm 100% not joking when I say that this will be the best salsa you've ever eaten.  I literally grew up on this stuff as a kid.  Every summer as soon as the garden tomatoes were ripe, there was continually a massive mixing bowl of this in the fridge.  We ate it on everything, chips: tacos, saltine crackers when we ran out of chips, with a spoon ( Read more... )

Earlier in the week, E. made me enchiladas based loosely on Vegan Dad's Green Enchiladas.  They were incredibly good, if a little hot (chipotle peppers always make me feel like my stomach is on fire, probably because I never have any self control when I put them into the recipe.  I made soup once and dumped in an entire can...)

So... I kind of invented this.  Again, though, I have to confess being influenced by Whole World Restaurant.  I had a bean quesadilla there that was pretty awesome, so I wanted to create something sort of similar at home.  This came out really good and was also really easy; I'll definitely make them again.

No photos of this, but I just had some 365 Organic brand "Refried Beans with Roasted Red Jalapenos" (purchased at Whole Foods).  I've had their refried beans with chili and lime before, and they tasted just like ordinary refried beans (nothing special)... but the roasted jalapeno kind is really awesome.  It's like bean dip in a can... it has a lot ( Read more... )

Nacho goodies:  Nutritional yeast cheese sauce (melt 1/2 c. Recently I've discovered Arriba!
