So... I kind of invented this. Again, though, I have to confess being influenced by Whole World Restaurant. I had a bean quesadilla there that was pretty awesome, so I wanted to create something sort of similar at home. This came out really good and was also really easy; I'll definitely make them again.
1 can light red beans, drained & rinsed
1 can northern beans, drained & rinsed
1/2 an onion, finely minced
wad of cilantro, also finely minced
tortilla shells (I used spinach ones)
white melty cheese sauce from The Uncheese Cookbook (happy to supply recipe upon request--very easy to make, and pretty good)
several dashes dry mustard
several dashes cayenne powder
several twists of freshly ground pepper
Mix all ingredients (except the shells, of course!) in a bowl. Lightly oil an iron skillet; place tortilla in when pan is hot. Spread the filling on half of the tortilla and fold over. Cook about a minute and flip.
