You got into the series a bit before I did, then--I started watching the anime in late 2002, IIRC (or possibly early 2003, but I know I started seeing it [in the middle] at Ryerson and was upset that their showing of the last episodes conflicted with AN).
I buy quite a few titles (I think I'm at around 22 right now), but I don't love any of them the way I love Furuba. There are some things I love but don't feel fannish about, though, which is a good feeling in its own right. NANA is my favorite thing that's currently running, probably followed by Sand Chronicles.
I also really like Honey and Clover (although it's not for everyone, and I didn't fall for it until about halfway through the series), We Were There, and High School Debut (for shoujo recs, and HSD is mainly a fun series). FMA and Claymore both get a lot of love on my f-list; I really like FMA and I'm slowly acquiring Claymore but haven't yet made it to the part where many people think it becomes amazing

I love Honey and Clover with all my heart (especially since I was an art student in university). It's possibly my second favourite thing after Furuba right now.
I like Nana, but everyone in it becomes ridiculously self-destructive. This annoyed me back when I was reading scanlations a year or two ago and I dropped it for a bit. It might be time to pick it back up again.
I'll check out your recommendations... that should help me get back on track with my manga addiction.
I've just passed the point in the H&C manga where I remember having fallen for the anime, and it makes me so happy. I like the beginning, but my adoration sneaked up on me gradually. By the middle I'm just like "I LOVE YOU ALL!!!!!" (Except Morita, often, but when he has moments I love they're awesome.)
The self-destructive tendencies in NANA are a very valid criticism. I find they hurt more than being annoying because I find most of the characters and the ways they self-destruct extremely believable, but I can see how that wouldn't work for everyone. >.> I really love most of them a lot, though.
Have you read Suppli? There're only three volumes out, and I don't know what its odds of continuing in English eventually are, but I quite liked those volumes.
Other titles that're coming to mind that aren't so much with the shoujo are things like Hikaru no Go, 20th Century Boys (and Monster and Pluto--I really like Urasawa), and Wild Adapter (actually, I have no idea what its demographic technically is). And I haven't read more than a

I could nod at almost everything you say here, so I'll just pick a few to comment on:
I'm fonder of Akito than I ever imagined (although still angry), but she definitely didn't have an overnight transformation. ^^;
I think this is one of the things I like best about Takaya's portrayal of Akito at the end. She *does* have resolution to try to become a better person, but she's still got a lot of demons to conquer, her temper being one of them. I see her as always having a short temper (although hopefully she will learn to get it under control) and being a bit anti-social, but leaving behind the cruelty and violent streak which had been so much a part of her.
There's one spot where the adaptation goes from casual to excessively slangy, IMO.
I noticed that, too, and it totally surprised me, especially since it didn't fit in with the preceding dialogue.
Akito's scene with her maid goes as far towards redeeming her as her scene with the 12shi, for me.This is one of the parts of the translation that I enjoyed the most, especially

I'm trying not to think about it. :/ I know it's one of those scenes that I feel so strongly about that it's bothering me more than it would if it had happened elsewhere, which is unfair, but...
I'm glad that the slip-up with Tohru's name is something that doesn't change the meaning of the scene--I mean, it does change the effect slightly, but it doesn't distort what's actually going on. I wish it weren't there, but as problems go it's not so bad in that sense.
I did note with amusement - though I totally expected it - that Saki's swearing was changed to a grunt.
I like Saki and Kazuma, but freely admit I don't like it for itself, I merely like it as everyone despises it. :) I'm contrarian in many, many fan aspects.

I totally agree with you regarding Saki and Azuma who is too spacey to notice - I do think it's one-sided on Saki's end. Another thing is I thing Saki could be amusing herself teasing Kyo. He's such an easy target. Ah, the zoo scene, Saki and Arisa love picking on Kyo :) A small question regarding Mayuko, did she have a hair cut between chapter 132 (when Tohru had a make up test) and final chapter (when she met with Hatori)?
re: Mayuko--yep, somewhere in there she cut her hair. It was foreshadowed way back in...vol. 10, when Shigure manipulated her and Hatori into spending time together again. ^_^
regarding Shigure, I can't figure out if he's an evil character manipulating behind the scene to achieve the end or he's a good nice character manipulating behind the scene. I find it's hard not to like him despite all his antics.
Opinions vary wildly. ^^; Me, I don't think he's evil, but I sure don't think he's nice. I think he's a selfish, manipulative man who set out to get what he wanted no matter who got hurt, and the fact that things worked out fairly well for everyone in the grand scheme was a nice bonus. I'm sure he's glad that the other characters are now able to go off and live their own lives, but if it hadn't worked out that way I don't know how much sleep I think he would've lost over it.
But that's obviously a fairly personal opinion, which is colored very heavily by Rin being my favorite character.
