That's so nice about your work folk helping out! That's a warm fuzzy, right there.
Re: comfort food that lasts days, I love veggie stew and dumplings (though obviously if you aren't a veggie you can stick meat in. I just use whatever I've got - lentils and pearl barley (pre-soaked overnight), carrots, peas, potatoes and home made veggie suet dumplings. Yum. It's one of those things that tastes better on the second day. I make fresh dumplings each day though, because they congeal if you leave them in.

i work with some really lovely people.

you know, i have no idea how to make dumplings. i've never had to. i found a recipe for lentil stew with tomatoes and potatoes and am going to try that. it really is stew season, isn't it.

Dumplings are dead easy (I don't cook anything that isn't easy!). All I do is measure out self raising flour in spoonfuls - twice as many spoonfuls of flour to spoonfuls of veggie suet, mix with water until the mix sticks together into a coherent lump then divide the mix into roughly spoon sized smaller lumps and add to the ready bubbling stew. they only take about ten minutes to be done - they expand as they cook, so don't make too many.
