I'm snowed in and just made homemade nachos, and it made me curious.

What do you guys put on your homemade nachos? Today it's just cheese and hot sauce for me, thanks to the snow.

finger foods, hot sauce, cheese... and lots of it

cheese, hot sauce, salsa, black beans, jalapenos, sliced tomato, sometimes diced onion and bell pepper, sometimes rice

he best nachos i ever concocted had leftover veggie fajita fixin's and some barbecue eggplant i whipped up.

the eggplant was really easy. i sliced one, then salted it and let it sit for a few to draw the excess water out(used paper towels). then i diced it, sauteed in olive oil til soft, and added bbq sauce and let it cook down.

Wow, that does sound easy. My sister's a vegetarian and we're always trying to think of different things to cook, this sounds great!

We made nachos earlier for a snack!

For lunch, I had sauteed some bell pepper & onion, and cubed up some pieces of chicken breast out of a leftover salad I brought home from Zea's Friday. Then added some homemade black bean & corn salsa...anyway, that was the filling for some burritos.

So we put that on top of some chips w/sour cream & cheese. YUM.

Meeee toooo....though most stores overcharge for it so I just get regular salsa and add my own corn & black beans. YUM!

Hamburger fried up and made with taco seasoning, sliced jalapenos, chopped red onion, diced tomatoes, black beans drained and slightly steamed (so they are slightly mushy), a mix of colby/jack and cheddar cheese shredded and hot salsa.

Steaming them is such a good idea, I don't normally use beans because they're too al dente or however you classify beans.

Out of the can is too crunchy and boiling them is too mushy. Steaming is a great compromise.
