We buy the flash frozen Talapia filets. I am not sure that makes a difference.
You defrost the filets partially. (They hold their shape better if you don't let them defrost entirely.)
Heat some EVOO in a skillet and dredge the filets in Old Bay Seasoning (you know Old Bay?) then saute the filets in the hot oil, turning once. It only takes about five minutes to cook them this way.
Old Bay just makes everything taste like Old Bay. Which is fine, since Old Bay is awesome. And Tilapia is a good fish for tasting like whatever is on it.
I'm rather partial to a light sprinkling of Old Bay on Salmon, actually.
