Quality of cheese and bread is obviously important. Although adding pork products is obviously a good thing, these days I also like to do something that's halfway to being a poor man's pizza: very thinly sliced red onion or scallion, sliced tomato (good ones with pelnty of flavour, such as cherry tomatoes), a small amount of chili (fresh peppers or a good sauce), and extra mature cheddar. Let the vegetable matter cook for 30 ses or so before grating over the cheese, and finish with lots of black pepper.
If they're just butter, bread and cheese, how much variety can there really be? I mean, there are only so many types of cheese and bread, and probably fewer combinations of the two that work well.

Grill in a buttered pan til quite toasty.
