I'd like to congratulate you on a new restaurant, but I've got a small concern about one of the items on your menu. The Daily Candy mentions that you've got "butterfish brûlée":

I think the phrase waxy seepage should appear on more menus. When I had the Walu (the Hawaiian name for Escolar) at Pacific Cajun and they failed to disclose the potential implications.

Hot crispy bacon is excellent. Cold bacon where the grease is kinda congealing into something the consistency of Vaseline is not. Thus I remain concerned.

Bacon ice cream can be really tasty if done right. I'm not even going to claim precedence, because it's been done so many times by so many people. It's no longer avante garde, and does not push boundaries. Diarrhea causing fish is more hard core, although it could just be viewed as direvative of olestra. Although "butterfish" might also refer to Peprilus triacanthus.

Wait a minute--I wonder if there's a way to make a tasty fish-flavored ice cream? Maybe with bits of crunchy crab cake, and a hollandaise sauce topping?
