I'd like to congratulate you on a new restaurant, but I've got a small concern about one of the items on your menu. The Daily Candy mentions that you've got "butterfish brûlée":
If the "butterfish" in question is escolar, aka Lepidocybium flavobrunneum, your diners might be in for an unpleasant surprise. The Escolar accumulates indigestible wax esters which can result in a rapid and unpleasant pants-ruining surprise.

Just a heads up. I'm a big fan of Citizen Cake and I'd rather not see Orson's opening tainted with escolar.
