I'm not vegan, but I happened to try this vegan recipe from bakebakebake for "Mexican Chocolate Cake" a few weeks ago when I was low on non-vegan cake ingredients. I have yet to pick up Vegan Cupcakes Take Over the World (too broke for new books these days) so I'm still searching the internet for my vegan baking recipes. The best cupcake recipe I've found thus far is from Jennifer Shmoo, which yields wonderful, fluffy cupcakes that a single omnivore has yet to guess is vegan.
