thai-style baked fish with coconut milk
this is a really easy, really yummy way of cooking fish. baking it in a parcel means that the fish kinda steams, and all the beautiful coconut/ginger/chilli flavours are locked in.

i use ling fillets because they're the cheapest, i'm not sure if they're widely available elsewhere (i live in australia), but you could really use any white fillet of fish.

sounds interesting. i'd like to give it a try. only thing, what is fish sauce? is it something you buy in a cpecialty store, or is it sold in regular supermarkets?

fish sauce and soy sauce have two very distinct tastes. i would not recommend substituting one for the other.
