thai-style baked fish with coconut milk
this is a really easy, really yummy way of cooking fish. baking it in a parcel means that the fish kinda steams, and all the beautiful coconut/ginger/chilli flavours are locked in.

sounds interesting. i'd like to give it a try. only thing, what is fish sauce? is it something you buy in a cpecialty store, or is it sold in regular supermarkets?

fish sauce and soy sauce have two very distinct tastes. i would not recommend substituting one for the other.

It's also generally cheap enough that it doesn't really hurt to keep a bottle around...I ended up surprising myself and now I need to get another!

It's a dark liquid that looks rather akin to soy sauce made by (if I'm not mistaken) basically fermenting anchovies and then processing the liquid. By Western standards, it smells quite atrocious on its own, but I find it really gives Thai food that distinctive Thai aroma/flavor. If your grocery store has a relatively expansive 'Asian Foods' section they probably, otherwise most any Asian market should.
