Would anybody be interested in a healthy/easy/cheap recipe exchange post? I always need more ideas/inspiration and I suspect I am not alone. I eat the same thing for lunch every day each week because I cook on Sundays (or Mondays when they're holidays, as today), and generally eat the same meal for dinner all week too because I have no energy to ( Read more... )

I always add lemon to lentil soups, it is like MAGIC. my other favourite ingredients for lentil soup are spinach, carrots, and shitloads of cumin. mmmmmm.

Bean salad! AKA 15-minute food. Mixed beans, avocado, spinach, pickled onions, steamed carrots/broccoli/asparagus/beets (not all of them, just whatever is seasonal or whatever you like--beats that have been steamed with thyme and olive oil and salt are delicious in this). Dressing, well, you know how to make dressing for bean salads, but for anyone else: a sweet/strong mustard, garlic, olive oil, apple cider vinegar, ground pepper, salt ( ... )

Yum! Thanks for sharing. I find I always end up having humus/sprout/leafy green sandwiches for lunch with carrots... I should definitely mix it up.

In terms of dinners, I have been doing a lot of squash and root veg because it's really all there is at the market this time of year! Butternut/acorn: bake in halves, then mash, season with a bit of maple syrup and cinnamon. Delicata: slice into rings, season with oil and balsamic, bake. Spaghetti: bake in halves, scoop out and mix with a tiny bit of butter and some garlic, or mix in to some rice/beans/barley/pasta. Mmmm.

I've also been enamoured with baking whole beets in tin foil until they're tender, they're SO SWEET like that . I've also been tossing sliced parsnips/rutabega/yam/potato/onion/carrots/turnips with a bit of veg oil, paprika and thyme, and roasting! Yum.

Your enchiladas sound awesome, I'm definitely going to try that!

What would be the directions for that baking beets in foil business? e.g. oven temp/timing? I've never really dabbled in beets and that seems like a good way to start. Also, how long would you roast those mixed veggies for? I didn't grow up eating roast veggies and so never got into the habit of making/eating them, and now they just seem intimidating EVEN THOUGH I KNOW PERFECTLY WELL THEY AREN'T. (Also, how long would a big mix of roasted root veggies keep in the fridge?)

roasting veggies: i usually toss them with some olive oil and sea salt, you can wrap 'em up in a little foil package and I usually set that on a cookie sheet in the middle of the over at 400F for about 40-45 mins.

Getting all public health-y here, if you store the veggies in a tightly sealed container they can last in the fridge for up to 5 days. Also, it's best to pack them in 1 container per serving so you're not repeatedly opening and closing the seal.

Seconding baking beets, soooooo good. I actually like to mash up some beet & cauliflower when I do sweet potato mash, too.

How do you feel about Brussels sprouts?

i fucking love brussels sprouts but i don't eat them very often because they don't keep. i am serious about not cooking very often.

Well then I'm useless, then. I'm trying to remember stuff I cooked when I lived alone, and I'm mostly coming up with frozen veg over pastas and cheeseburgers. I pre-portion all my breakfasts for the week on Tuesdays now (because my days at work are so long I have to eat breakfast), but they mostly involve yogurt. Fail /o\

I have a ton of crock-pot soup recipes that involved chopping stuff, throwing it into the pot and walking away. They definitely keep for days, but IDK if you like soups or have a crock pot?
