Would anybody be interested in a healthy/easy/cheap recipe exchange post? I always need more ideas/inspiration and I suspect I am not alone. I eat the same thing for lunch every day each week because I cook on Sundays (or Mondays when they're holidays, as today), and generally eat the same meal for dinner all week too because I have no energy to cook most days.

For lunches this week I am making enchiladas!
I'm making roast garlic mashed potatoes and using that as filling along with refried beans and red onion in a whole wheat tortilla. (I will be baking them with enchilada sauce but no cheese.) I'm serving them with avocado slices and salad.

For dinner most of the time I steam up a bunch of veggies (broccoli, carrots, kale or chard) and put them on a plate with some quinoa and protein of some sort (marinated tofu, garlicky chickpea smash [smush up a can of chickpeas with minced garlic and red onion and hold it together with a bit of tahini], sometimes just beans from a can if I'm lazy), add some raw diced red onion and halved cherry tomatoes, and slather the whole thing with lemon-tahini-olive oil dressing [whisk ingredients together with water, adjusting proportions to taste and desired consistency]. You prep all the veggies the first time you make it and then you get 2-3 really easy meals afterwards! The hardest part is waiting for the quinoa to cook.

I also eat a lot of chili for lunches:
Fry up a diced onion, diced green pepper, a bunch of diced carrots, and garlic to taste in a bit of oil. Add cumin, paprika, chili spice, oregano, salt, pepper, and any other seasonings of your choosing. Add a big can of diced tomato and a small can of crushed tomato. Add a can of kidney beans and a can of black beans and maybe a third can if there's room. Stir together, adjust seasonings, and let simmer until you're so hungry you can't wait any longer. You can cook up a diced sweet potato separately and add that too, om nom, or chuck in some frozen peas/corn towards the end. Amazing with crusty bread.
