Oh I'm jealous of your trip - I've never been to that area!

Have you tried Damn Good Paleo Chili from Holly Would if She Could's blog? I usually chink some portobellos into it too. She's encouraged me to add zucchini squashes to more dishes. I'm also a huge fan of the Chocolate (cocoa) and Coffee Crockpot brisket from ourfullplate! So stupidly easy... I made it Sunday morning and served it with a parsnip, cauli and carrot purée. All the noms!!

I can't wait! We've never been to that area either so we're super excited.

I haven't tried the Damn Good Chili, but I'll definitely check it out. I love portobellos, and I never thought to add them to chili but sounds fantastic. Thanks so much for all your recommendations. Most appreciated!
