I'd completely forgotten about late round university offers until I saw the mail today. I got a late round offer to do arts/laws at Monash University. Originally Victoria only wanted to take me for arts/laws at La Trobe which I expected but still turned me off studying in Melbourne

When one studies arts at an Australian university, does one have to specialize? And is language and literature considered to be part of the arts curriculum, or is that considered (as it is in the US, for reasons that are not entirely clear to me) part of the humanities?

I thought so too. :P
Arts at Australian universities is more like humanities than art. It's languages, literature, drama, history et al. Visual art is considered part of the 'fine arts' (or at least at the unis I've read about).
I think at least one major is compulsory and I'm planning on two: English and linguistics.
