Sweet Potato Fries from Quick and Healthy, 2nd Edition

1 lb. sweet potatoes, peeled
1 tablespoon olive oil
1/2 teaspoon seasoned salt

Preheat oven to 450 degrees.

Cut potatoes into half-inch slices or strips.

Place potato slices in a plastic bag with oil and seasoned salt and shake well to coat potatoes evenly.

Spray a baking sheet with non-stick cooking spray or cover with aluminum foil. Arrange potatoes in a single layer and bake for 15-20 minutes or until golden brown, turning potatoes halfway through cooking.

Good with a dipping sauce of sour cream and brown sugar. Officially 4 servings, really more like 2.
