I mentioned in my last post that hubby and I stopped at a few wineries but I didn't mention that we also stopped at a farm stand. A lot of farm stands sell their fruits and veggies at an inflated price because they are fresh from the farm. The farm stand we stopped at had the inflated priced veggies but they also their fruits and veggies by the bushel. We bought the smaller bushels of tomatoes, peaches and cucumbers along with some peppers and zucchini.
When we arrived home I was faced with the puzzle of what to do with my farm stand haul, before the fruits and veggies turned bad. I was especially worried about the peaches. With the help of the internet, I made and canned peach butter, made and froze a peach pie filling and made a peach upside down cake. With the cukes, I made and canned 4 jars of dill pickle chips. The cake and the peach butter were yummy, although if I make the butter again I will cut the sugar, since I thought it was a tad sweet.
This is the first time I've made cooked pickles. I've made cold packed pickles several times and used several different recipes and each time I was never fully happy with the results. Cold pack pickles are very easy to make and have to stay in the 'fridge. Cooked pickles are canned, so they have a shelf life of up to 12 months. I have to let the pickles rest for 3 weeks, so I'll find out then if the recipe is any good.
