I mentioned in my last post that hubby and I stopped at a few wineries but I didn't mention that we also stopped at a farm stand. A lot of farm stands sell their fruits and veggies at an inflated price because they are fresh from the farm. I'm not a canner but Best Friend has been canning everything for decades. Jams, pickles, tomatoes, green beans, sauerkraut, you name it.

I've never heard of peach butter but damn does that sound good! Hopefully the pickles turn out good! I keep meaning to make my own pickles, but I've yet to actually do it lol. I also want to make kimchi but I also haven't done that yet XD

Peach butter is like apple butter but with peaches. I used
this recipe. This is the pickle recipe I used the first time I made pickles. They are very easy because it the cold method, which means no cooking or sealing, they have to be refrigerated. They tasted fine but they weren't crunchy. I've tried another recipes and they were crunchy but not very much flavor. Hopefully the 3rd time will be the charm.

I've had apple butter so man. Now I need to get some peach butter lol!

I usually make a couple of batches of salsa and pickles, but I don't think we'll do pickles this year. It hasn't been a great year for cucumbers. I usually use the Ball's canning guide for recipes, and have been quite happy with them.

My concern about canning is I worry about botulism. I know Ball gives details on what can and what can't be canned. If I intend to do more canning I will have to get that book.

You could do pressure canning, which will cut down on the risks.

I've never heard of pressure canning before. The Ball pressure pot is a bit pricy and unles I do a whole lot more caning I can't justify buying it, but it's a great idea. I might consider buying it for my son.

Do you have a pressure pot?
