Pumpkin-CousCous Casserole

So today I was experimental in my cooking, and it worked out! This is super-simple, only takes about an hour from opening your first can until pulling it out of the oven. The only thing is that you must love pumpkin, because it's by far the overwhelming ingredient. If anybody tries this & figures out a better spice combo, please let me know. ( Read more... )

I just made this for a Thanksgiving Potluck and, to my surprise, it was *loved* by many. Albeit, I did change the recipe a touch, so here's the udpated ingredient list. All the directions are still the same. (oh, and i also halved my recipe since last time was a bit too much)

1 15oz can pumpkin
1 cup applesauce (i.e. 2 of the single-serving cups)
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1/2 cup syrup (i used an empty applesauce container to "measure")
1/2 package plain couscous (as well as its required oil and water)

all fit nicely into a 2 quart casserole dish.
