I got this recipe from a Better Homes cookbook but modified it.  It's SO good, you might just need to make it every week ( Read more... )

You don't even know. My boyfriend BEGS for it at least once a week.

That just about convinced me, haha. Mhmm. What does this go well with?

We usually have a salad with red onion slices and tomatoes with some newman's own oil and vinegar dressing.

for desert we melt a chocolate bar with milk and dip pineapple, strawberries, and banana in it a la fondue.

and of course seltzer.

I make something like this, only I put white wine or leftover champagne (or a little from a bottle that I just HAD to open for the recipe, and, well, can't let it go to waste, can we?) in with the juice and stock (so you need to balance it out a little). I once substituted some of the chicken for scallops. Mmm. (Dan doesn't eat sea-related things, so it was too many pans to make it a regular thing, to cook some chicken and some scallops and make people happy.)

I've never tried it with spinach fettuccini, but I have some left over from my last pasta-making expedition! I think we will have to enjoy this tomorrow evening! Thanks!

(If I were to die from overeating one food, it would be pasta.)

Pasta is my favorite food group, haha.

Scallops sounds good! I've never cooked them before, but I sure do love to eat them. How long do you have to cook them for?

I never buy wine, but I may have to in order to make this new recipe (and to drink, duh).

Let me know how you like it!!

that sounds delicious but with my cooking skills, i'd be sure to screw it up somehow!

i know you said you're hopeless, but it's SO easy.

chop first.
boil water.
cook pasta.
put all the things in the pan and cook them, in turns.
mix together.
yum.

even my boyfriend can do it, and he's not that skilled in the kitchen either.

albeit he does it a LOT slower than i do.

i think i may try that, it sounds really good! and it's one of those things that can be altered really easily... add vegetables, a little bit of wine, and it's a whole new dish :)

Definitely. You can leave it as is or add other stuff. Just don't let it get too liquidy.

That sounds fabulous! I'm adding it to my cookbook (when I decide to make it. Currently it's just a folder in my desk at work. It's on my 101 list, so it will get done eventually!) Perhaps I'll even make it this coming week. :) Thanks m'dear for sharing!

I want to. I might see if I can do it Monday. I get home late from work which normally keeps me from making dinner for Dave and I. This past Monday I made dinner and we didn't eat until 8. I was dying at that point!

I always eat dinner after 9 because when I get home from work the last thing I want to do is cook. I always have a snack between 5 and 6 to help with late dinner. And, oddly, this eating habit is helping me lose weight! wtf?
