Mrs. Trump of Country Markets (WI stall at the Farmers Market every other week) is off on her hols. She makes a wonderful carrot cake, which helps us at the office get through the week. It would have to have a melt in the mouth buttercream filling and lots of home made jam in the middle and a buttercream topping as well - and even more ideally have very few calories.

It's a strange day (or one where I'm cooking for the v*gans) when I don't use butter. As for fancy diet sugar substitutes, they can sling their hooks.

I'm more of a savoury fella anyway.

Hmm, lavender & lemon from Coffee, Cake & Kink, or a really good coffee ring cake my mother used to make, which was doused in Tia Maria, or also her rather good marmalade cake. Cake was a real rarity when I was growing up, my mum only baked about twice a year, but I did like the ones she made as they weren't too 'sweet' and had more interesting flavours than the usual fruit stuff.

I absolutely hate Chr*stm*s cake though.
And jam.

I should vist Coffee, Cake & Kink sometime (if it's still about), a friend swore by it ... although lavender is a tricky one to balance.

CCK has closed it's premises now, but you can order the cake online. It's pricey though, and I imagine you could get just as good cake in the boutique bakeries and delis in Bristol ... or made by your own fair hand of course!

a really melt in the mouth coffee cake with loads of coffee buttercream in teh middle and on top -but no walnuts!
