So after all these claims on the site that you can in fact make icing with Splenda and three failed batches of icing following Splenda's own recipes I call bullshit. I call it hardcore. They can take their recipes and shove it up their ass. It does not work and I'm convinced it doesn't work. I would also like to point out that cream cheese in 90% ( Read more... )

Tastes better, but different chemical makeup than sugar, so no. Won't work. You need the crystal structure for icing and you just don't get that from not-sugar.

Fat is not the enemy for diabetics, carbs are. (truthfully, for most diabetics, sugar isn't even the biggest problem but I digress) Splenda is made from sugar treated with chlorine so the chemical reaction you'd get with sugar in baking and icing making etc is obviously not going to work, plus it tastes like crap. But cream cheese should be fine. It's low-carb and sugar free, right?

Yes, weight gain is a serious issue for most people with diabetes. Fat is also bad since many diabetics have other issues such as heart troubles, thyroid issues etc. And yes, weight,... and therefore fat, increases the issues diabetics have because weight gain makes blood sugar harder to control.

Splenda's website says it will work and if you'd have taken the time to read what I wrote you would have seen that is what I was referring to. You can read here and look at the recipes which do in fact claim that with small modifications Splenda is supposed to work: http://www.splenda.com/page.jhtml?id=splenda/cookingbaking/main.inc

As mentioned.. they suggested full fat cream cheese plus butter in some of them. Low carb and sugar free does not mean it is good. It's not fine particularly since I have just posted about my father.. the diabetic in my life, being in the hospital just recently. Diabetics do in fact have to monitor fat intake.
