I've been spending some time canning lately. I've got a lot of stuff stocked up and still not enough Spaghetti sauce and there's no apple anything made yet. So far though there's an awesome stock up

Aw man! That preserves sound fantastic. The only fruit I've done is peaches. I'll likely do a shitton of applesauce come apple season down here.

Tear it out? Make mojitos? Um... I can give you the recipe for mint syrup. I am working on figuring out mint jelly too. :)

That's some pretty impressing canning! I still haven't gotten over my fear of botulism to try it yet, but this gives me a bit more courage.

There are ways to ensure you don't If you are really paranoid I would suggest The Ball Complete Book of Home Preserving Edited by Kingry and Devine. It goes over all the little details and gives hints etc.
