Congrats on being all moved :) You'll be unpacking for days...weeks...months... *innocent smile* And Giles will adjust; it'll just take him a little longer to get used to things.

As far as the hypothetical question--absolutely. In fact, I've thought about deleting my journal numerous times just because sometimes it's more headache than it's worth, plus the whole having-changed-as-a-person thing.
