I don't eat peppers, but MY GOODNESS this looks delish. I'm going to have to try it, for sure! Minus the peppers. :) Have a recommendation for a substitute?

You don't even like the orange and yellow bell peppers? I don't like the green ones much, but I do like the orange and yellow. They're sweeter than the green.
Um . . . I dunno, you could add some onions slices or something, but I don't think it would hurt to just leave them out.

That sounds really good! I'll be making a LOT more veggie-based recipes now that I know where our farmer's markets are :) I've always wanted to try the veggie sausage.. how is it? Good? Any brands better than others?

I like the Morningstar Farms brand because they actually season it a bit. Some of the veggie sausages out there aren't really seasoned at all, which means they taste a bit bland and less like the sausage I grew up eating. (Note: I think Morningstar Farms makes an "organic" veggie sausage too that isn't seasoned the same as the non-organic kind. I usually buy the non-organic kind cause that's easier to find and I like its seasonings better.) I think Morningstar Farms' veggie sausage patties are definitely the best, and for the links I maybe like Boca a little bit better than Morningstar Farms. In this recipe, though, I don't think it matters what kind you get, because you'll be adding seasonings to the soup, not just eating the sausage by itself.
