It's better if you can let it sit with your spices and whatnot for at least overnight. Tofu acts (and looks!) like a sponge, so it "soaks up" whatever you've marinated it in. IMO the spicier the better, but we were trying to get our toddler to eat, too.
I don't - this was the first one I'd seen that was tofu-Mexican. Usually for mexican I use the veggie ground beef if I want to go vegetarian. Also good, but I'm excited to try a tofu recipe!!
That looks awesome! As a vegetarian with three meat eaters in the house, I love hearing about recipes like this where no one will even notice that it's tofu :)
