I've always wanted to try tofu, but have been afraid of it. :) THIS is the show stopper! I'm definitely going to try this recipe. Thank you...

It's better if you can let it sit with your spices and whatnot for at least overnight. Tofu acts (and looks!) like a sponge, so it "soaks up" whatever you've marinated it in. IMO the spicier the better, but we were trying to get our toddler to eat, too.

I don't - this was the first one I'd seen that was tofu-Mexican. Usually for mexican I use the veggie ground beef if I want to go vegetarian. Also good, but I'm excited to try a tofu recipe!!

That looks awesome! As a vegetarian with three meat eaters in the house, I love hearing about recipes like this where no one will even notice that it's tofu :)

My husband was very skeptical about tofu, and he likes this dish and asks for more. He'd rather have tofu enchiladas than meat ones at this point.
