Quizno's Style Flat Bread

I was nervous to venture into flat breads, but when I did, I wanted something easy and practical.  This recipe is certainly that.  Now I alternate this with the bread recipe I posted previously.  It's light and just sweet enough.  I love this bread right from the pan, or as a sandwich, or any which way.  I've posted this picture of the bread in the ( Read more... )

these look really good :) they look almost like tortillas but i'm assuming that the yeast makes them a bit thicker? and the honey and sugar a bit sweeter of course :) looks tasty! i'll have to try to make it someday! I just need yeast :D

They are thicker, almost two or three times thicker, and sort of spongy. They're just slightly sweet.

I love it when it's fresh, all by itself. Otherwise, we eat pretty much any sandwich with it, hot or cold. My husband loves it as a grilled cheese with tomato soup, too.

Those sound really good. Just curious how you scald milk. (I'm pretty much self taught when it comes to cooking, so I only know the basics).

Super easy! Just put it in a saucepan and heat on low-medium until the milk warms and a thin sort of skin forms. It's almost undectable. This recipe works, even if you just warm the milk until little bubbles start to appear. It's the warmth that releases the sugars in the milk that help the yeast do it's thing. :)

easier still, use the microwave. You still risk a boil over, but no burning. My Home Ec. teacher clued us kids into that one .. (sighs).. almost 30 years ago. ( God, I'm old ) ;)

Do you have to use margarine, do you know? Or will butter work OK?

I just cut and pasted that, but I used butter. I should have edited it to reflect that. yes, butter works very well. And it's way better tasting than margarine! ;)

Do you have to use the honey? The sugar is to feed the yeast but we like stuff more savory (hot) than sweet.

I don't know. I imagine that you could tone it down some, as I can't imagine it would change the texture all that much. It's not overly sweet, just a hint.
