Those look and sound awesome - lemon and shortbread, mmmm! Lucky you, with all those fresh lemons :-) What would you change about the topping - more conf. sugar, or something different?
Did you use a food processor? I have one, but I have this...thing...about it, and I never use it, so I usually skip all recipes that call for one. I was wondering whether I could just use a pastry cutter.
Actually I just used my mixer, on the lowest settings! It seemed to do the trick. We love our food processor though, my only wish is that it were bigger! It doesn't hold much at all. I love it though.. used it last night to make breadcrumbs! I think once you start using it, you start to love it. Sometimes I even use it to chop onions if I don't feel like "crying" that night :)
