and with the option to unjoin them if wanted it should be no problem, or?

You'd be able to remove them from your friends list, just like any other friend; and existing users would not have them added to their friends list (at least, assuming we go with tydel's solution above, which would seem reasonable).

All this would do is have news and lj_maintenance be automatically on the friends list of any new user.

Is anyone concerned that the type of posts made in lj_maintenance may need to be more user friendly should we start adding everyone? Or is it at an ok level already?
Or does it not really matter?

I personally think they're fine. So long as any potentially geeky things are divided into "English" and "Geek", you don't really need to worry about anything, I don't think.
