Weekend recipe: Pumpkin Pudding

 This is an easy little dessert recipe that serves 2 or 3 people, or, in my case, just one. I like it because I can make it without heating up the house during hot summer days. Interested?

*dashes back from kitchen* I HAVE ALL THE INGREDIENTS FOR THIS! I will be making this post-haste, thank you for the recipe...I wonder if these would make good pudding pops...

I hope you like it. I'm all for less kitchen mess since I hate doing the washing up. Can't wait to read your popsicle recipes when you post them. We need some healthy treats around here.

I'm going to be making another recipe that uses pumpkin, but I only need 15 oz and the can is 29, so this looks like a nice easy way to use up some of the rest of it. :)

I used to take the leftover pumpkin to work with me and eat it cold. It was a very good pick-me-up.

My family and I love pumpkin. This looks great! We normally divide pudding into enough for the whole family, so this should make enough for us. Thanks for sharing!
