Carrot Ginger Curry Coconut Kitchen Sink Soup with Coconut Shrimp

Ahahaha. I realized that there are way too many words in the title, but dammit, it's Carrot soup with ginger and curry and coconut. And skrimps. Most cream of carrot soup recipes have OJ in them (whyyyyy?) or way too much onion, or some other thing that I can taste over the deliciousness that I WANT to taste. So I made this up last night. NOOOOOOOOOO!!!!!!! :((((((( OH, I'm so sorry to hear about your pussy-ass throat not being able to handle the awesome!!!! LOL.

You know, with the curry in it, you could get away without the ginger. There's enough flavor there to make up for it.

I AM SAD FOR YOU. Like, puppies with casts on their legs sad.

Ooooh. Double check whatever curry you buy (curry is like chile: a bunch of stuff ground up together.) Some curries have ginger in it, so DOUBLE CHECK.

We freaking live off curry in my house. It's so so good and there are so many kinds!

Oh. My. Gawd. You have just made me a happy soup-maker once again. I lurrrrv ginger plus carrot plus num, and have not really cared for any of the recipes I've tried to date. I'm v. thrilled to try this soon, esp. since it's 50 freaking degrees out. WTF, weather? I will, however, be omitting the skrimps (vegetarian and allergic to seafood anyhow).

I've had LOADS of different cream of carrot soups, and the ones with a more southern Indian/Asian flavor are always my fave.

No skrimps?! WOE. ;) But yes, allergies are not good. We had some toast with this, and even without the shrimp, it would be a filling (and satisfying) meal on its own.

Gimme Indian or Thai anyday, and I'm a happy girl. :) Mmmmm... Some lightly garlic-ed crostini would be divine.

When I was three, I almost died eating a shrimp. True (very short) story.

I had a boyfriend growing up that was from the Bayou (he was a Cajun) and they had fish frys every weekend with the family, esp. during crawfish/shrimping season. he got Iodine poisoning from eating too many shrimp one time and wasn't able to be around it, let alone eat it. Fish allergies can be crazy scary!

All right, the recipe sounds delicious. I also like the sweetness of shallot better than onion for many recipes. Leeks are also underused, but often a better, milder choice. Leeks with nutmeg are delicious. *G*

Like the shrimp addition, too. I'll bet they taste wonderful. Lucky you.

Can one do P90X without a pull-up bar? Besides free weights, would any other equipment be necessary?

Mmmm, leeks and nutmeg. Totally agree with you, there. We've been on a bok choy kick lately, and I'm going to saute some tonight with garlic, lemon, and maybe a touch of nutmeg. YUM.

You can do P90X without a pull up bar. They sell stretchy bands that you can use in a modified manner to simulate a pull up bar quite easily. The Mister takes those with him when he travels instead of free weights and chip-up bar.

Dear Lord, that soup looks great! I just ran out of carrots this afternoon *makes grocery list*

I just checked "Strangers" out of the library a couple weeks ago. I hadn't laughed and cringed and laughed so much in forever.

You must get carrots! An autumn without carrots is like a hooker without spandex!

Oh man, I love Strangers With Candy so much. I have all three seasons on DVD - it's one of the only times I've ever enjoyed Winona Ryder, too.

But have you seen this Polygamy Tours: A Guided Tour of Colorado City? It costs about $70/person and is supposed to give you a day in the life of an FLDSer.
