Not only is this nutritious and ACTUALLY HEALTHY for you, it fits my heretofore ignored doctor-prescribed "low-carb" diet (low-carb to the Doc actually means no-starches-or-fruits but all the veggies I want, but I'll eat fruit anyway because it's good for me and I feel better if I do, so NUTS TO HIM). Which is good, because when I look for low-carb recipes they're usually all "SO YOU KNOW WHAT YOU CAN REPLACE THAT SUGAR WITH, IS LARD AND SALT." No lie, I've seen several websites/cookbooks advocate watered down half-and-half/heavy cream instead of milk and cinnamon pork rinds instead of breakfast cereal. WTF. /rant

Well, that's how I made the coconut shrimp, so it's not like you'd get in a restaurant with breading, etc. Which is probably better for you, lol.
