Ahahaha. I realized that there are way too many words in the title, but dammit, it's Carrot soup with ginger and curry and coconut. And skrimps. Most cream of carrot soup recipes have OJ in them (whyyyyy?) or way too much onion, or some other thing that I can taste over the deliciousness that I WANT to taste. So I made this up last night. Not only is this nutritious and ACTUALLY HEALTHY for you, it fits my heretofore ignored doctor-prescribed "low-carb" diet (low-carb to the Doc actually means no-starches-or-fruits but all the veggies I want, but I'll eat fruit anyway because it's good for me and I feel better if I do, so NUTS TO HIM). Which is good, because when I look for low-carb recipes they're usually all "SO YOU KNOW WHAT YOU CAN REPLACE THAT SUGAR WITH, IS LARD AND SALT." No lie, I've seen several websites/cookbooks advocate watered down half-and-half/heavy cream instead of milk and cinnamon pork rinds instead of breakfast cereal. WTF. /rant ( ... )

Well, that's how I made the coconut shrimp, so it's not like you'd get in a restaurant with breading, etc. Which is probably better for you, lol.

There's a saying here that something has "everything but the kitchen sink" in it. So I had lots of words in the title, meaning, it needed the kitchen sink in it, too.

Jokes are funnier when you break them down... :D
