As for the Harvey Girls: If I remember correctly they were the waitresses/hostesses at a resturant owned by a gentleman with the surname Harvey. They lived in a dormitory setting, wore identical clothes and worked for the company to afford the cost of their room-and-board. I seem to recall it was a sort of indenture designed to get more marriageable girls ‘out West’.
