Interesting question! I used to have a character who had a hellhound as a companion but that's because he was the son of Death, lol.
I consider a more romanticized approach to "catching a hellhound". As I see it, the hellhounds are heralds of death but they don't work for themselves. They are always released to tear apart a soul under contract by a demon. It stands to reason, then, that someone with demon blood or a demon themselves could be forced to call a hellhound and make them work for Sam or Dean. Or, perhaps Sam and his demon mojo, could even call one himself and somewhat tame it.
Otherwise, I'd say catching one might be more of a deus ex machina device -- there's a trap/sigil/way to achieve anything you want. Bobby's books must have a way to trap a hellhound in it somehow. Perhaps Dean could convince Tessa to help them out as she is affiliated with death rather closely as well.
Ummm. The one problem would be that only those people who are close to death because of a pact with a crossroads demon seem to see them at all. At least so far in the show. I'm not even sure how much good it would be to capture one if you cannot see it.
You could make up some mythology if it is essentual, unless it comes as part of Sam's contamination by demon blood now, but would need to be explained.
They've always wanted a puppy. They would hold him and pet him and squeeze him and love him and call him George.

I really can't think of a viable reason for wanting to capture a hellhound - they're not creatures that have much (any?) say on what they are doing. Unless Sam and Dean are trying to prevent someone close to them from being ripped to shreds by one - and that doesn't work, because they seem to "hunt" in packs.
I reckon that it might be possible to catch a hell hound. You'd have to be near death to do it, since only people who are near death can see them (sorta like with the Reapers). As for why? Well, since it does seem like the hell hounds are under contract, if you captured a hell hound and got it to do as you wished, you'd have one hell of a guard dog.
I'm not sure why they'd want to capture one but one major problem would be not being able to see them since the only ones that can see them are people that made deals that are coming due and demons. So they'd need to do a spell or capture a demon to find one. I guess Sam could find out that he can now see them since he really tapped into his powers now.
