Calling all tofu aficionados.

I think there's a certain amount of irony in the fact that as I was puttering in the kitchen before coming to write this post, I dropped a full bottle of steak sauce on my toe.

Anyway, tell me what to do with tofu! Got favorite recipes? Preparation tips? Dos and don'ts? Lay 'em on me.

So you can do all kinds of savory things with tofu, including spicy stir-frys that are marvelous things, or putting big fried or toasted wedges in pad Thai or sommat, but this is the wackiest most marvelous thing I've ever tasted:

Chocolate Mousse

3/4 cup semisweet chocolate chips, melted
1 12.3 oz package reduced fat, extra-firm tofu
-blend together in a food processor or blender, 2 minutes or until smooth

in a mixing bowl, beat until stiff peaks form
1/4 teaspoon salt
3 large egg whites

bring to a boil in a small saucepan:
1/2 cup sugar
1/4 cup water
and cook until a candy thermometer reads 238 degrees. Then pour in a thin stream into egg whites, beating at high speed. Stir 1/4 of the mixture gently into the chocolate/tofu stuff, then gently fold in the rest. Separate into dessert cups, cover and chill for 4 hours, serve with fat free whipped topping and grated chocolate, if you like.

8 servings, 150 calories, high protein, low fat.

It kind of completely camoflages the actual tofu, so I hope it's still in the spirit of the request.

It is Totally Yummy. And almost guilt free. I actually aim for a diabetic/low sugar kinda diet (family members, plus it seems to work for me too) so I substitute the sugar and only occasionally bother with the fat free whipped topping stuff--full glory whipped cream, here I come! YUUUUUUMMMMMMM.

Wonder if I have any tofu? hmmm....

*nod* I'm dealing with PCOS and its best friend, insulin-resistance (between that and my family history, I have "Welcome diabetes!" flashing in neon across my forhead), so I'm kind of going for the same sort of dietary trends. So guilt free = awesome.

I'm actually one of those rare people that *likes* tofu, but a really easy thing to do with it is cut up into small pieces of then spray with garlic cooking spray and bake for about 20 mins and then you can stir through a warm salad or noodles or something in place of chicken or beef...

Gives the tofu a nice flavour... :)

What temp do you bake it at? Does it deal with high heat (400ish) and stay intact?

Usually about 180 degrees C so whatever that is in Farenheit... :D Seems to withstand okay. If you want to do at a bit higher temperature probably just do for about 10 mins...

I LOVE tofu in hot and sour soup, but I've never made it from scratch. So...that doesn't help you whatsoever. :D
