I don't buy that no soul = evil. And human = soul, demon = no soul. I don't get it. It makes no sense. And I see no reason to believe that only humans have souls. That is highly unlikely.

What about Clem and Lorne? Were they evil? Did Doyle, who was half demon, have half a soul? Was he half evil?

I am very suspicious of the Watcher's Council and see no reason to think that their definitions of vampires, slayers and their origins are necessarily the truth. I think a great deal of information was lost or deliberately buried. And some 'prophecy' is actually just long lost information.

To make things easier in my 'verse, Animal blood and packaged human blood are acceptable substitutes for fresh-from-the-tap human blood.
