Today, I made two pot roasts with potatoes and carrots and doubled a cookie recipe I haven't made in YEARS.

Both came out wonderfully, despite my brain being too fried to remember to add salt and pepper to the roast and nearly too fried to do the math to double the recipe.

I had three dinner guests and still have many leftovers...

I find that co-workers are great for making leftovers disappear. Just in case you feel like cooking too much again.
