Pear-Zucchini Jam (or pear-courgette jam, furriners)
It should be noted, first of all, that this is not designed to be canned. It's a good way to use up leftover fruit that will not get ripe.

I'm sure that some of you think you hate eggplant, and that others among you would eat it with every meal like I would. Here's a recipe I would never have used if I didn't have six eggplant in my fridge, and which turned out to be excellent.
